Chewy Chocolate, Chocolate Chip Cookies

A chewy, decadent chocolate cookie with a little kick.

Ingredients

  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup butter
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 2/3 cups all purpose flour
  • 1/3 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp cayenne powder
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees.  Line two cookie sheets with parchment paper.

  2. In large mixing bowl, cream together sugars and butter until smooth and fluffy.  Add eggs and vanilla and mix until incorporated. 

  3. In a separate bowl combine flour, cocoa powder, baking soda, baking powder, salt and spices.

  4. Gradually add flour mixture into sugar and mix until combined.  

  5. Stir in chocolate chips.  Drop dough by heaping teaspoonfuls onto cookie sheet, about two inches apart (or by tablespoons if you want larger cookies).

  6. Bake for 8-10 minutes for smaller cookies and 9-11 minutes for larger.  They will be very soft when you first take them out, but will firm up as they cool.  Wait about two minutes then move to a wire rack to finish cooling.

  7. This will make 2-3 dozen cookies depending on the size you make them.
