Homemade Mayo Made Simple

Fresh, homemade mayonnaise with simple ingredients and nothing artificial is much healthier than store bought…and it’s paleo-friendly.  The key to perfect mayo is to make sure all of the ingredients are at room temperature before you start mixing, and to add the oil slowly so it will emulsify.  Easy peasy!  Once you have the basic mayo down, you can experiment with different herbs and spices to make flavored mayonnaise and aioli.  You can also add coconut milk or almond milk to the seasoned mayo to make salad dressings.

Simple Homemade Mayonnaise

Delicious mayonnaise with natural ingredients.

Ingredients

  • 1 1/4 cups light olive oil - divided
  • 1/2 tsp sea salt
  • 1/2 tsp ground mustard
  • 1 egg
  • 1/2 lemon - juiced or 1 tbsp vinegar

Instructions

  1. With a hand mixer mix 1/4 cup of light olive oil with salt, ground mustard, and egg until well blended.

  2. Slowly drizzle in remaining cup of olive oil while blending with hand mixer at high speed.  Keep mixing until thick and creamy and all ingredients are full incorporated.

  3. Add juice of 1/2 lemon, or 1 tbsp of vinegar until well mixed.  Add more lemon juice if preferred to taste.

  4. Store in refrigerator for two weeks.
