Mix It And Forget About It!
That’s what I love about meals in the crock pot! Throw everything in and go about your day…then suddenly dinner is ready! How perfect is that? And this Sausage and Potato Casserole is the epitome of comfort food AND made in a crock pot. Woo hoo! With creamy potatoes; gooey cheeses; spicy sausage; and a little spinach thrown in for good measure, it is terrific on a plate next to a crisp salad, or just served in a bowl all by its lonesome.

For this casserole, start with a bag of frozen hash browns (thawed). You can use Simply Potatoes, which are usually found in the refrigerated section near the eggs, if you prefer.
Add any kind of link type sausage you enjoy (we used Turkey Kielbasa), cheese (I used cheddar for the great sharp flavor and gruyere because it melts so well), and green chilies.
Mix in milk (you can use cream if you prefer a creamier texture, but milk works well and adds less fat) and yogurt or sour cream.
Then season with garlic powder, pepper, paprika, and just a pinch of salt. You don’t want to add much salt here because the sausage and the cheeses will both add salt as well. Put the lid on the pot and cook on low for 6 hours, or on high for 4 hours.
In the last 30 minutes add spinach and stir in well. Put the lid back on for the remaining cook time. At the end of the cooking time, turn pot off (or to warm) and top with additional cheese. Put the lid back on for five minutes to allow the cheese to melt.

Crock Pot Sausage and Potato Casserole
A creamy potato casserole packed with sausage, cheese and spinach.
Ingredients
- 1- 30 oz pkg frozen hash browns - thawed
- 1- 16 oz pkg turkey kielbasa (or other flavor)
- 8 oz cheddar cheese - grated
- 4 oz gruyere cheese (or other preferred) - grated
- 2- 4.5 oz cans chopped green chilies
- 1 1/2 cups milk
- 7 oz plain greek yogurt (or sour cream)
- 1 tsp garlic powder
- 1 tsp pepper
- 1 pinch salt
- 10 oz fresh baby spinach
Instructions

In crockpot, mix hasn browns, sausage, four ounces of cheddar cheese, gruyere cheese, and chilies. Add milk and yogurt, then mix in seasonings. Cover and cook on low for six hours or on high for four hours.

During the last 30 minutes of cooking time stir in spinach and replace cover.

At the end of cooking time, turn crock pot off (or to warm) and sprinkle remaining cheddar cheese on top. Cover and allow to melt (about 5 minutes).
