Well, it finally happened!  I walked to my car in the early morning hours to leave for work and there it was…taunting me with its glistening smile as if to say “I’m ba-aaack.”  Frost!  Not just the condensation I’ve gotten used to in the past few weeks, but actual frost … 1. A deposit of minute ice crystals.  Granted, it wasn’t very thick and the car defroster melted it in maybe 30 seconds or so, but it was enough to give me the Fall feels!

autumn daysI know not everyone is as excited about Fall’s arrival as I am, but I have to say it put a little pep in my step thinking about it!  There’s a crispness in the air that makes me think of soft, bulky sweaters; warm socks; football; and of course…cool weather recipes!

A Great Pot of Chili

One of my family’s favorites is chili…warm, hearty, thick chili.  My dad used to make a wonderful chili that would take practically all day to cook.  He would add stuff to the pot, stir, taste, simmer…it was so good!  But truthfully, most of us these days just don’t have the time to cook a pot of chili all day.  So over the years I’ve tried a lot of combinations trying to get that spicy chili flavor without the hours of simmering.  This one hits all the notes a great chili should have, and comes together in about 30 minutes!

chiliThis recipe is great with ground beef, chicken, or turkey.  Just brown the meat in a large pot with garlic and onion (yes, the fantastic aroma starts right away!). Once it’s browned, drain off the fat and add canned tomatoes, sugar (sugar cuts a bit of the acidity in the tomatoes), and seasonings and simmer.

While simmering, mix masa harina (corn flour) with water, then pour into the chili.  This will thicken your chili and add this wonderful corn flavor as well.  If you like your chili a little soupier, just add a 1/2 cup or so of water and adjust your seasonings to taste.  Add canned beans and simmer for another 10 minutes.

Top your chili with any of your family’s favorites…grated cheese, sour cream, sliced green onions, tortilla strips…and enjoy!  I usually make a double batch for leftovers or to use in other recipes that call for chili.cheese

30 Minute One Pot Chili

A warm, hearty delicious Chili that's ready in about 30 minutes

Ingredients

  • 2 lbs ground beef, turkey, or chicken
  • 1 onion - chopped
  • 2 cloves garlic - chopped
  • 2 -14.5 oz cans diced tomatoes
  • 1 tbsp sugar
  • 4 tbsp chili powder
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 cup masa harina (corn flour)
  • 2 -15 oz cans Pinto beans or kidney beans - drained
  • Shredded Cheese - optional for serving
  • Chopped Green Onions - optional for serving
  • Sour Cream - optional for serving

Instructions

  1. Place ground meat in a large pot with garlic and onion. Cook over medium heat until browned.  Drain off excess fat.  Add tomatoes, sugar, and the remaining seasonings and stir well.  Simmer for 10 minutes on medium heat. 

  2. In the meantime, mix masa harina in a small bowl with 1/2 cup of water.  Pour into the chili and mix well. If the chili is too dry add 1/2 cup of water and adjust the seasonings to taste.

  3. Add beans and simmer on low for 10 minutes.  

  4. Serve with shredded cheese, green onions, sour cream, or your family's favorite toppings.  Enjoy!
