Mediterranean-Inspired Chick Pea Salad
A Vibrant salad with chick peas, cucumbers, tomatoes, and those bright Mediterranean flavors.
Ingredients
- 1 can chick peas - rinsed and drained
- 10 oz heirloom or cherry tomatoes - halved
- 1/2 English cucumber - halved and sliced
- 3 green onions - thinly sliced
- 1/2 cup chopped parsley
- 1 tsp salt
- 1 tbsp Za'atar seasoning
For Dressing
- 1 tsp garlic powder
- 1/2 lime zested and juiced
- 1/3 cup olive oil
- pinch of cayenne or chili pepper flakes (optional)
- salt and pepper
Instructions

In a medium bowl stir chick peas, tomatoes, cucumber, onions, parsley, 1 tsp salt and Za'atar together until well mixed.

In a small bowl whisk together garlic, lime juice and zest, olive oil and cayenne or pepper flakes (if using). Pour over vegetable mixture and stir until well coated. Add salt and pepper to taste. Let chill in the refrigerator at least 15 minutes so the flavors will develop.
