Our “Out of the Norm” Holidays
Well friends, it’s a new year with new goals and new adventures ahead of us! The past few weeks have been a mixed bag of happiness, laughter, activity, and some sadness in our house, so I am very excited to be getting back into some normalcy (and back at the keyboard).
I love the holidays…the decorations, the food, the music…but this holiday season was a bit different from our norm. Our son’s college graduation was smack in the middle of the month so, with family coming for the celebration, my husband and I spent some time updating an empty bedroom (paint, new flooring, etc.), deep-cleaning the house, shopping…I know you know what I am talking about! Which means I did not spend nearly as much time as I normally do decorating, baking, planning.
And Why They Were Still Perfect
But the wonderful trade-off was getting to visit with family I hadn’t seen in some time (most of my family is back home in Texas), watching my son cross that stage and achieve one of his goals, having all the kids under one roof for a minute, and spending some time in the kitchen with my daughter Kat, who is away at grad school.

Being away from home and fending for herself, Kat has become quite the cook, and has even started venturing into baking. She made dinner for the family one night, and she baked several batches of cookies, including her Five C cookies below.
Seeing your babies doing grown-up stuff is somewhat bittersweet…there is pride in the amazing, self-sufficient adults you helped them become, tinged with a little sadness that they will need your help less and less as they move into their own lives. But enough nostalgia…let’s get to those cookies!
Kat’s Chewy Chocolate, Chocolate Chip Cookies (lovingly nicknamed the Five C cookies)
These delicious cookies come together quickly, and disappear just as fast! They have a surprise kick that comes from the ginger and the cayenne, but it is not at all overpowering and even the kids will want more!
You simply cream together the sugars and butter with a mixer (stand or hand-held) until they are light and fluffy. Add the eggs and vanilla and blend well. In a separate bowl mix together the dry ingredients (except the chocolate chips). Gradually add the dry ingredients into the sugar mixture, mixing until it is well incorporated and forms a dough. Stir in the chocolate chips.
Drop by teaspoonfuls (or tablespoonfuls if you want larger cookies) onto a parchment-lined cookie sheet about 2 inches apart. Bake for 8-10 minutes (9-11 minutes for larger cookies). They will look soft when you take them out, but they will get firmer as they cool. Allow to cool about 2 minutes before you move them to a wire rack to finish cooling. Then enjoy!
Chewy Chocolate, Chocolate Chip Cookies
A chewy, decadent chocolate cookie with a little kick.
Ingredients
- 1 cup sugar
- 1 cup brown sugar
- 1 cup butter
- 2 eggs
- 2 tsp vanilla extract
- 2 2/3 cups all purpose flour
- 1/3 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp nutmeg
- 1/4 tsp cayenne powder
- 2 cups semi-sweet chocolate chips
Instructions

Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.

In large mixing bowl, cream together sugars and butter until smooth and fluffy. Add eggs and vanilla and mix until incorporated.

In a separate bowl combine flour, cocoa powder, baking soda, baking powder, salt and spices.

Gradually add flour mixture into sugar and mix until combined.

Stir in chocolate chips. Drop dough by heaping teaspoonfuls onto cookie sheet, about two inches apart (or by tablespoons if you want larger cookies).

Bake for 8-10 minutes for smaller cookies and 9-11 minutes for larger. They will be very soft when you first take them out, but will firm up as they cool. Wait about two minutes then move to a wire rack to finish cooling.

This will make 2-3 dozen cookies depending on the size you make them.

I love the story behind these cookies. Your daughter and I have the same name! I’m not a chocolate lover (I know I’m weird) but I know a lot of people who love chocolate with a kick so would love these cookies.

I will be honest and tell you that I do not want to take the time to make the Five Cs right now, yet I would not mind eating them. What? You say that I have to out in the work to get the reward? Okay, okay. This could be a fun, family endeavor for us, too!
