A Simple Fudge Cake That Doesn’t Taste Simple!

Whenever my menu (or my tastebuds) require something decadently chocolate without a lot of time or fuss, this Triple Chocolate Fudge Cake recipe is my go-to. With chocolate three ways and moistness for days, everyone will think it took hours to make, but you can say “nay, nay!”

One of the great things about this cake (there are a lot of great things about this cake!) is that it starts with a mix so even a crazy-busy mom can make it for any occasion. And with just a hint of warm spices added, your kitchen will smell magical!

Putting It All Together

Two bowls and a baking pan…that’s what you will need. Start by pouring your dry cake mix into a large mixing bowl. Take out two tablespoons of the mix and put that into a small bowl for later.

Chocolate Cake Mix with Sour Cream

To the cake mix in the large bowl add the dry pudding mix, eggs, water, oil, cinnamon and cardamom, and sour cream. Mix for 30 seconds with a hand mixer to incorporate ingredients, then mix on high speed for two minutes, scraping the bottom and sides to get all of the dry ingredients mixed in.

Chocolate Chips

Add the chocolate chips (after all, it is Triple Chocolate Fudge Cake) to the small bowl with the reserved dry mix and stir to coat the chips well. This will help keep them from sinking to the bottom of the pan as the cake cooks. Gently fold the coated chips into the large bowl of batter. Pour the batter into a prepared 13×9 pan. Bake for 30-35 minutes at 350 degrees. Remove to a wire rack and allow to cool completely.

When the cake is cool you can dust it with powdered sugar, or top with frosting or fruit. We topped ours with this delicious Spiced Cherry Compote and it was amazing.

Ingredients

  • 1 box chocolate fudge cake mix divided
  • 1 small box chocolate pudding mix
  • 1 cup miniature semi sweet miniature chocolate chips Can use dark chocolate chips
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 cup water
  • 1 cup sour cream can use plain yogurt
  • Powdered sugar for dusting optional

Instructions

  1. Preheat oven to 350 degrees.

  2. Pour dry cake mix into a large mixing bowl. Remove two tablespoons of the mix to a small bowl and set aside. Into the large mixing bowl add dry pudding mix, cinnamon and cardamom, eggs, water, vegetable oil, and sour cream. Mix with a hand mixer for about 30 seconds, until ingredients are mixed well. Increase speed to high and mix for two minutes, scraping bottom and sides of bowl to get all of the dry ingredients mixed in.

  3. Add the chocolate chips to the small bowl with the reserved cake mix and gently stir to coat the chips well. This will help keep the chips from settling to the bottom of the pan during cooking. Gently fold the coated chips into the large bowl of batter.

  4. Grease and flour a 13×9 pan (or coat with cooking spray) and pour batter into the pan. Cook at 350 degrees for 30-35 minutes (toothpick inserted in the center should be clean). Remove to a wire rack and allow to completely cool. Adjust cooking times if using different sized pans.

  5. Dust with powdered if desired, or top with frosting or fruit.
