Oops, I Did It Again!

As I seem to do on a regular basis, I went shopping at Whole Foods last week without a menu plan. So several days into the week those beautiful, ripe strawberries were still in my fridge, teetering on the edge of no return. Luckily, I also bought a loaf of chocolate swirled brioche. Suddenly “no plan” became a match made in dessert heaven…this decadent Chocolate Strawberry Bread Pudding!

To all the bread pudding aficionados out there I have to confess upfront, I typically don’t make traditional bread pudding with hearty bread that has to soak in the custard for hours. I just don’t usually have that much time. But I love to make bread pudding with a soft brioche that comes together quickly and becomes soft and supple in the oven.

Chocolate Brioche

I knew this chocolate-swirled brioche would be the perfect complement for those bright berries (who doesn’t love chocolate and strawberries?). And making this decadent Chocolate Strawberry Bread Pudding is so simple. Just whisk together milk and cream, cornstarch, sugar, eggs, vanilla and lemon juice, pour over cubed brioche, add sliced berries and gently stir (you don’t want to make the bread too mushy). Bake in ramekins or an 8×8 baking pan and bake for 30-35 minutes. Top with glaze and/or chocolate sauce.

How easy was that? It comes out soft and silky, with rich chocolate ribbons and bright pops of strawberry. You will wish you made a double-batch! This recipe is versatile and works very well with other fruits. Give it a try when you are looking for a quick and easy dessert that tastes like you slaved over it!

Decadent Chocolate Strawberry Bread Pudding

Ingredients

Bread Pudding

  • 1 1/2 cups strawberries – hulled and sliced
  • 14 oz chocolate swirled brioche bread
  • 1 cup milk
  • 1 cup heavy cream
  • 2 tbsp cornstarch
  • 1/2 cup granulated sugar
  • 2 large eggs – slightly beaten
  • 1 tbsp lemon juice
  • 1 tsp vanilla

Glaze

  • 1/4 cup powdered sugar
  • 1 tbsp milk or whipping cream
  • 1/2 tsp vanilla
  • 2 tbsp chocolate sauce or chocolate syrup

Instructions

  1. Preheat oven to 350 degrees.

  2. Hull and slice strawberries. Cube brioche bread.

  3. Spray four 8 oz. ramekins or one 8×8 baking pan with non-stick spray.

  4. Whisk milk, cream, cornstarch, granulated sugar, egg, lemon juice, and vanilla together in a large bowl.

  5. Gently mix in bread cubes until they are coated with custard mix.

  6. Fold in sliced berries until just mixed.

  7. Pour pudding mixture into ramekins or baking pan.

  8. Bake 30 – 35 minutes or until lightly browned and set.

  9. Remove from oven and cool for 10-15 minutes.

Glaze

  1. Mix powdered sugar, milk, and vanilla together until smooth. If too thick add a small amount of milk. If too thin, add a small amount of powdered sugar. Pour over bread pudding after it has cooled. Drizzle chocolate sauce/syrup over the glazed puddings.
